Brand Chef/ Brand Kitchen Manager

Job Description:

The Brand Chef is responsible for the development and implementation of new menu items and for assisting in the development, implementation, and improvement of processes and procedures related to the execution of a time-tested menu.

Duties/Responsibilities:
Research, develop and test new food items and new or alternative ingredients to improve existing menu.
Develop testing protocol and ensure products tested are operationally feasible and meet target budget parameters.
Work with Marketing team to create ideas for new product development (i.e., promotional ideas and region-specific items).
Prepare recipes, procedures, specifications and training materials to ensure consistent testing and execution of main menus and catering menus and products according to established brand standards.
Work with Finance team to track product consumption, labor hours, guest counts, food cost, etc. as necessary to gauge overall profitability of test goals.
Conduct periodic competitive and consumer trend analysis to inform future product development.
Manage nutritional database on a periodic basis to ensure guests have access to updated information.
Help coordinate product for photo shoots, video work, sensory events, and other agency related activities.
Develop, monitor, and report project status to ensure timely menu changes, while working with internal team and external resources to develop recipes and methods of food production.
Effectively gather information outside the company (including competitive analyses) to stay current with industry trends, practices, and standards.
As necessary, test and evaluate new equipment; make recommendation for purchases of equipment or smallwares and/or procedural changes based on research and testing.
Prepare and present food items for executive cuttings, product/menu reviews, and other ad hoc requests.

Requirements:
Proficiency with all types of kitchen preparation and storage equipment and strong institutional knowledge of food preparation.
Demonstrated ability to successfully develop food products for a multi-unit restaurant concept.
Must successfully pass a background check (credit, driving, and criminal); must have a valid Driver's License and have use of a properly maintained, licensed, and street-legal vehicle.
Must be computer literate, including Excel.
Regular travel required (estimated 50%) throughout Arizona and possibly Colorado.

Education and Experience:
5+ years relevant product development experience in a casual dining environment required with a working knowledge of food science; an equivalent combination of education and professional experience may also be considered.
Culinary training and experience preferred.
Experience with recipe costing and nutritional software a plus.

Physical Requirements:
Ability to withstand temperatures equal to or less than 0 -F and equal to or greater than 100 -F.
Must be able to lift, balance, and carry up to 50 pounds for distances of up to 50 feet.

Work Environment: Restaurant test kitchen and home office in Scottsdale
Reports To: Director of Marketing
